Ingredients:
1 egg
8 oz ricotta cheese, well drained
1/2 cup freshly grated Parmigiano-Reggiano cheese plus extra for sprinkling
1/4 cups parsley
2 garlic cloves, mashed through the garlic press
pinch of salt & pepper
1 teaspoon of olive oil
3/4 cup of flour or more if needed
Directions:
1. Combine all ingredients then add flour last. Work ingredients together with your hands to form a dough.
2. Transfer the dough to a lightly floured working surface and knead lightly for 2 to 3 more minutes, gradually adding a little more flour if the dough sticks to the board or your hands. The dough is ready when it no longer sticks but is still somewhat tacky to the touch and soft.
4. Divide the dough into four pieces and roll into balls. Using both hands, roll out each ball of dough into a log about the width of your index finger. Cut each log into 1/2 inch pieces.
5. Bring a large pot of water to a boil. Add a teaspoon of olive oil oil and the gnocchi.
6. Cook, uncovered over high heat until the gnocchi rise to the surface of the water, about 2 to 3 minutes.
I tossed mine in a olive oil, sauteed garlic and chopped tomato sauce and sprinkled with Parmigiano-Reggiano cheese and fresh Italian parsley. Che fantastica mangiata!

How do you pull it off? When do you make these amazing meals?
I'm all for cooking from scratch, but I usually save the more complicated recipes for the weekends. The gnocchi -- defintely a weekend-type project for me. How do you do it?
I have been asking myself that lately...lol.
I wake up at 6 every morning, get him ready, drive him to daycare, drive well over an hour to work, get off, pick him up from daycare, get home at 6pm, feed him, play with him, bath him and put him to sleep.
Then I can breath for a second and I start making dinner for my husband, who get's home later, and I.
At last Gabriel (my son) gets another bottle and a diaper change at 10pm, and I go to bed. Next day is ground hog day!
The weekend is usually reserved for grocery shopping, baby food making and painting our new home.
Really, the hardest part for me is leaving him at daycare and not being able to stay home with him.
Holy smokes!!! After getting home from work and going through the nighttime routine with Gabriel, you THEN begin cooking dinner (and take pictures along the way)?!?
That's it! If anyone complains about not having enough time to make their family a nutritious meal, I'm sending them to your blog. :-)
Ha ha, I know... I am crazy. I am trying to prepare for his first b-day now! Any advice is greatly appreciated! :)
for taylor's first birthday, we just did burgers and fries because we have extremely picky eaters in our extended family, and we knew everyone would eat burgers.
we ordered a MUCH smaller version of our wedding cake (because everyone loved it so much) to serve to our guests.
the only item i obssessed over was the cupcake i made for taylor. it contained carrots, apple juice, raisins, wheat germ (among other ingredients) and was topped off with a cream cheese icing. she hadn't eaten refined sugar yet, so i was being a bit wacky about not feeding it to her.
i'm sure you'll whip up the ultimate feast. can't wait to see the pix of that one! :-)
